Abby loves both Chick-fil-A and Easy Mac. I tried 2 new recipes to make these meals a little healthier. I like the way Rachael Ray cooks, simple and usually healthy. I tivo her show and watch the interesting parts when I have time. She had these great tips recently on her show...
She had the Hungry Girl on her show to show one woman how to make a chicken sandwich that would be similar to Chick-fil-a's. I was skeptical when her main ingredient was Fiber One (the bran one that looks like cat food). I tried to make it like Chick-fil-a, down to the melted butter and pickle. Of course it wasn't exactly like Chick-fil-a but it was very tasty, full of fiber,and very healthy. I usually alter any recipe I use so I'll share my altered one and here's a link to hers.
Fiber One bran cereal
chicken breasts
grill seasoning
one egg
wheat buns
dill sandwich pickles
Smart Balance light (any marg or butter will do)
I poured some cereal (didn't measure) into my food processor, added grill seasoning, and blended it until was very tiny. I dipped chicken in egg, then cereal, and put on baking sheet. Baked at 375 for about 20 minutes, flipping half way through. Toasted the bun, spread a little melted butter on bun, and added chicken and a few pickles. Bake some fries and you're ready to go!
On to the mac and cheese (ingredients above). Since Abby asks for this every night (she doesn't get it every night), I wanted to make it a little healthier than the powdered cheese and also cheaper. Buy your own elbow mac noodles (whole grain if you can find it)and instead of powdered cheese, you use cauliflour in cheese sauce and a little sharp cheddar cheese(2% or fat free if possible...or what's on sale). I blended the caulifour in cheese sauce in food processor until it just looked like cheese sauce, poured it over cooked noodles, and added in the cheddar cheese.
